  • 3.5 oz Skinless chicken breast
  • tsp salt
  • ¼ tsp Sugar
  • pinch dried herbs, pepper

Method
 

Prepping
  1. Butterfly the chicken breast so it has an evenness.
  2. Rub salt and sugar evenly over the surface. Add herbs and black pepper.
  3. Wrap the chicken tightly in plastic wrap, then refrigerate for 1 day to let the flavors absorb.
Cooking
  1. Poach in simmering water 160-170℉ for about 15-20 minutes, or until fully cooked.
  2. Let it cool slightly before slicing.
