A colorful Japanese rice bowl topped with seasoned ground turkey, fluffy scrambled eggs, and savory spinach. Simple to make, high in protein, and satisfying as a full meal or quick lunch.

Ingredients
  

  • 8 oz Ground turkey
  • 2 tsp Soy sauce
  • 1 tsp Mirin
  • 1 tsp Sugar
  • 2 Large Eggs
  • 1 cup Spinach
  • 2 servings Steamed rice

Method
 

Soboro
  1. In a nonstick pan over medium heat, cook the turkey while breaking it up with a spatula.
  2. Add soy sauce, mirin, and sugar. Stir until the liquid is absorbed and the turkey is crumbly. Set aside.
Egg topping
  1. In a small pan, scramble the eggs with salt over low heat, stirring constantly. Until soft and fluffy
Spinach
  1. Lightly blanch spinach in boiling water, then drain and squeeze out excess water. chop into bite size pieces.
To serve
  1. Arrange the turkey, eggs and spinach side by side over a bowl of steamed rice.
