A colorful Japanese rice bowl topped with seasoned ground turkey, fluffy scrambled eggs, and savory spinach. Simple to make, high in protein, and satisfying as a full meal or quick lunch.

Soboro
- In a nonstick pan over medium heat, cook the turkey while breaking it up with a spatula.
- Add soy sauce, mirin, and sugar. Stir until the liquid is absorbed and the turkey is crumbly. Set aside.
Egg topping
- In a small pan, scramble the eggs with salt over low heat, stirring constantly. Until soft and fluffy
Spinach
- Lightly blanch spinach in boiling water, then drain and squeeze out excess water. chop into bite size pieces.
To serve
- Arrange the turkey, eggs and spinach side by side over a bowl of steamed rice.
